We used to only do cupping sporadically when we got some new coffee, but thanks to your growing interest we will make it a recurring event, thank you! :)
We always have at least 4 specialty coffees worth trying and the list often changes too, so we believe that you will find something a little different on the table every month.
We will talk a little about the coffees, then we grind them, smell them and finally taste them.
The entire cupping procedure is as follows:
- We take a bowl with having volume of about 180 ml and coarsely grind 11 grams of coffee into it
- We smell the ground coffee, preferably each of them on the table basically at once, as this is the best way to compare them
- Then we fill the bowl with coffee with water having roughly 95 degrees Celsius
- In the second minute or so, we smell the wet grounds, it gives us again another hint of what's the coffee like
- In the fourth minute, we take a spoon and break through the crust that has formed from the poured coffee in the bowl. A lot of aroma will emerge from under the crust, again giving us a little picture of the coffee
- We collect the foam from the surface in which coffee dust particles float, the foam with these parts is too bitter and would distort our impression of the coffee
- We wait until about twelve minutes and taste the coffee. The human tongue is not built for hot temperatures, it cannot distinguish flavors in hot temperatures, so you have to wait for the coffee to cool down
This whole event is scheduled for roughly 1 hour and is limited to 5 people due to the small size of our coffee shop.
