Finca Las Barreras, owned by Joaquin Palomo, is located in the Bálsamo-Quetzaltepec mountain range, in Cantón San Juan Los Planes on the slopes of the San Salvador Volcano. Joaquin, an agricultural economist and respected businessman, bought the estate a few years ago, bringing his expertise and long-term vision to the farm. Though he only has a few decades of experience in coffee growing, Joaquin has deep roots in agriculture and aims to create a sustainable operation focused on producing high-quality coffee while supporting the local community. The farm covers 56 hectares, with elevations ranging from 1,315 to 1,480 meters above sea level. Las Barreras is known for its Strictly High Grown (SHG) coffee, cultivated under ideal conditions for specialty production. The varieties grown include Bourbon, Pacamara, Icatu, Maragogype, and Yellow Catuai. The harvest season runs from December to March, with an average annual rainfall of 2,100 mm and temperatures around 23°C. Joaquin has emphasized modern techniques and renovation to maintain the farm's productivity and quality, with meticulous care given to every stage of cultivation and processing. Joaquin also actively supports the community by providing supplies and meals to the local school and offering permanent jobs to at least ten workers, with 120 more temporary positions during the harvest season. This particular lot of Red Icatu was selected from the peak of the harvest, showcasing the best qualities of the farm. The processing involved traditional depulping, natural fermentation for 24 hours, and drying on clay patios and raised beds for an average of 14 days. The milling was carried out at El Borbollon Mill, ensuring careful handling to preserve the coffee's quality. Las Barreras continues to thrive with Joaquin's dedication, producing coffee that reflects his commitment to sustainability, quality, and community support.

Výborná, silná chuť. Miluju ji v ledové kávě, kde její chuť vynikne i při spoustě mléka.
